Healthy pickled beets

Components:

Seven big, fresh beets
one cup vinegar
Half a cup of sugar
1½ teaspoon whole cloves

Guidelines:

To prepare the beets, start by giving them a good scrape. Save about an inch of the stems when trimming the tips. Put the beets into a Dutch oven and pour water over them. After bringing the water to a boil, lower the heat to a simmer and cook, covered, until the beets are soft, 25 to 30 minutes.

After removing the beets from the water, let them to cool before peeling. Peel and slice the beets after they have cooled. After chopping, place the beets in a basin and reserve.

Prepare the Pickling Solution: Add the vinegar, sugar, whole cloves, whole allspice, and salt to a small saucepan. It should take around five minutes to bring the mixture to a boil.

To pickle the beets, cover the sliced beets with the hot pickling solution. Make sure the solution has completely dipped the beets.

To allow the flavours to blend, cover the basin and place the beets in the refrigerator for at least an hour.
